Ingredients
- 300 g / 10.6 oz brown lentils
- 1.3 l / 44 fl oz water
- 3 sweet dry chorizo sausages
- 2 garlic cloves, chopped
- 1 onion, chopped
- 1 carrot, diced
- 1 potato, chopped
- 1 teaspoon sweet paprika
- 1 bay leaf
- Salt to taste
- Olive oil
How To Make It
Step 1: We begin preparing our lentils with chorizo by adding the onion and garlic to a pan with a little olive oil over medium heat and cooking for a couple of minutes. Then we add the carrot, stir, and cook for 4 more minutes.
Step 2: Add the chorizo and cook for 5 minutes, then add the sweet paprika and cook for 1 minute. Add the lentils, stir, and cook for 1 minute. Then add the water, a little salt, and stir. Add the bay leaf, and when it starts to boil, lower the heat and cook for 40 minutes.
Step 3: After 40 minutes, uncover and add the potatoes, cook for another 20 minutes (covered), then remove from the heat, serve, and your delicious lentils with chorizo are ready.
Tips To Prepare It
As for the lentils, we can use whichever variety we like best. On this occasion, we chose brown lentils, as they are quite tender and do not need to be soaked.
As for the chorizo, we recommend using a high-quality variety, and smoked chorizo is even better, as it adds a fantastic flavor and ensures that our lentils have the taste they deserve.
For the potatoes in this lentil and chorizo recipe, you should chop or cut them into chunks. To do this, use a knife to cut segments (tearing off the piece) so that they release their starch and add texture.
