Ingredients
- 500 g strawberries, cut into pieces
- 250 ml whipping cream or cream for whipping 35% fat (must be cold)
- 180 ml condensed milk
- 1 tablespoon sugar
How To Make It
Step 1: We begin preparing our strawberry ice cream. To do this, we add the chopped strawberries and a tablespoon of sugar to a pan over low heat and cook for about 15 minutes or until it takes on a jam-like texture. Then we remove it from the heat and blend it.
Step 2: Add the crushed strawberries and condensed milk to a bowl and, using an electric mixer (or a hand mixer), beat until the ingredients are well combined.
Step 3: In another bowl, add the whipping cream and beat with an electric mixer until the cream is whipped. This process will take a few minutes, so be patient. When you see that the mixer leaves marks in the cream and the cream has a firmer texture, it is ready (the cream must be very cold, as must the bowl and mixer you are using).
Step 4: Take a little of the whipped cream and add it to the strawberry and condensed milk mixture. Then, using a spatula, gradually fold it in with enveloping movements. Add this mixture to the rest of the whipped cream and continue mixing slowly with enveloping movements until it is perfectly blended.
Step 5: Pour the mixture into a container and flatten the top so that it is even. Cover with parchment paper as shown in the video and place in the freezer for at least 12 hours (you can prepare it the night before).
Step 6: Remove from the freezer and leave at room temperature for a few minutes, then use a scoop to take out several portions, serve them in a bowl, and your delicious homemade strawberry ice cream is ready (you can decorate it with syrup, strawberries, cookies, or whatever you like best).
Tips To Prepare It
The whipping cream must have a minimum fat content of 35% (you can check this in the product specifications).
You can serve this strawberry ice cream with whatever you like, for example, adding strawberry syrup, chocolate sprinkles, strawberries, cookies, etc.
When whipping the cream, make sure it is very cold. It will take a few minutes to whip, so don't despair.
Both the bowl in which you are going to whip the cream and the beaters you are going to use must be very cold when you start. Keep them in the freezer for a while before starting the strawberry ice cream recipe.
Don't overbeat the cream. When you see grooves starting to form, it's ready.
It's important to leave the strawberry ice cream in the freezer for at least 12 hours.
