- 250 ml / 8.45 fl oz hot vegetable stock
- 1/2 zucchini, chopped into small cubes
- 5 slices bacon, chopped
- 1 teaspoon curry powder
- 1 tablespoon olive oil
How To Make It
Step 1: We begin preparing our couscous with zucchini and bacon. To do this, place the couscous in a pot or bowl, then add the hot vegetable broth, cover completely, and let cook for 4 minutes. After 4 minutes, uncover, add a tablespoon of olive oil, stir, and set aside.
Step 2: In a frying pan over medium heat, add the bacon (no need to add oil, as the bacon will release its own fat) and cook for a few minutes until golden brown. Then add the zucchini and cook for 3 more minutes, then add the curry powder, stir, and remove from heat.
Step 3: Add the zucchini and bacon to the couscous, stir until combined, and your delicious couscous with zucchini and bacon recipe is ready to serve.
Tips To Prepare It
When adding the vegetable broth to the couscous, make sure it is hot and cover it completely so that it cooks perfectly. (You can do this in a saucepan with a lid or in a bowl covered with plastic wrap).
