Ingredients
- 1/2 rabbit (approximately 600 g)
- 10 crushed garlic cloves
- 120 ml white wine
- 1 handful chopped fresh parsley
- 1 teaspoon fresh thyme
- Salt and pepper to taste
- Olive oil
How To Make It
Step 1: We begin preparing our conejo al ajillo by placing a little olive oil in a saucepan over medium heat, adding our previously seasoned rabbit pieces, and cooking them until they are golden brown. We then remove them from the saucepan and set them aside.
Step 2: Add the garlic and cook for a couple of minutes, then add the white wine and let all the alcohol evaporate (2 minutes). Next, add the pieces of rabbit that you had set aside, the thyme, and the fresh parsley. Cover the pan and cook over medium-low heat for 15 minutes.
Step 3: Once the cooking time is up, remove from the heat, add a little more parsley, and your delicious rabbit with garlic is ready to serve.
Tips To Prepare It
If you prefer not to use white wine, you can substitute chicken or vegetable broth, although the final flavor will be slightly different.
You can add other aromatic herbs such as rosemary or bay leaf, and you can also add mushrooms or peppers if you wish.
Use a dry, good-quality white wine. It doesn't have to be expensive, but avoid low-quality cooking wines.
