How To Make Puff pastry palmiers

Step 1: We begin the preparation of our palmiers, for this, we preheat the oven to 180 ºC /356 ºF with heat up and down, then, we place the puff pastry dough on a flat surface, we add a little sugar on top and spread it throughout the dough, then we crush a little with the help of our hands, so that the sugar sticks very well to the dough.

Step 2: Turn the puff pastry dough over and repeat step 1 again (add sugar and spread very well) then we will mark the dough in 4 equal parts (only mark to fold later, do not cut the dough) drawing a horizontal line in each part.

Step 3: We go to the bottom of the dough and fold it up to the first line we marked, then we go to the top and do the same, taking the dough up to the line, add a little sugar and go to the bottom again, fold the dough again to the next line, repeat the process at the top and add again a little sugar, then take the bottom part and fold it up to place it on top of the other part of the dough (see the video).

Step 4: Cut the dough into pieces of about 1 cm and a half, you can help with your finger and go cutting the pieces, once we have them cut, we will place them on the baking sheet (covered with parchment paper) leaving a little space between them, then we will separate a little their tips as I show you in the video so that they take the shape of palmiers.

Step 5: Finally we take them to the oven and cook them for 20 minutes, after that time, remove them from the oven and let them cool for a few minutes, then we transfer them to some racks, let them cool completely and we have our delicious puff pastry palmiers ready.
