How To Make Caponata

Step 1: We begin the preparation of our caponata, for this, in a pan with a little oil and over medium heat add the eggplant, stir, cook for 5 minutes and set aside.

Step 2: Add a little more oil and add the green bell pepper, yellow bell pepper, red bell pepper, stir, cook for 5 minutes and set aside.

Step 3: Add a little more oil, add the celery, cook for 5 minutes and set aside.

Step 4: Add the tomatoes, stir and cook for 5 minutes, then add the onion and cook for 2 more minutes.

Step 5: Add the eggplant, peppers, celery, green olives, capers, stir, then add the sugar, vinegar, a little salt and pepper, stir, lower the heat, cover and let it cook for 10 minutes and our delicious caponata is ready.
