How To Make Buñuelos de viento

Step 1: We begin the preparation of our buñuelos de viento, for this, in a pot at medium temperature, we will add the water, butter, sugar, lemon zest, pinch of salt, stir and cook until it begins to boil, just then add the flour and stir everything very well until you get a dough as shown in the video, remove from heat and let it cool.

Step 2: When the dough is already cold, we will add 1 egg and integrate very well, then add the second egg and integrate again, repeat this step with the remaining 2 eggs, then let the dough rest for 30 minutes.

Step 3: Place a frying pan on the fire (medium heat) with plenty of oil and when it is hot, we will fry our buñuelos, to do this take a dessert spoon and grab a certain amount of dough, then with another spoon push it so that it falls into the oil (see video) let it cook a couple of minutes or until you see that it begins to brown, just at that moment we turn it over and cook it about 3 minutes more, repeat this step until all the dough is used up, once the fritters are done, remove them from the pan, place them on absorbent paper to remove excess fat, serve them on a plate, sprinkle them with a little powdered sugar on top and we have our delicious buñuelos de viento ready.
